  • 500 g chicken livers cleaned and trimmed

  • 2 tablespoons fresh lemon juice

Instructions
 

  • Clean the Chicken Livers:
    Start by cleaning the chicken livers under cold water. Trim away any excess fat or sinew and pat them dry with paper towels. Set aside.
  • Prepare the Seasoning:
    In a small bowl, mix together the cumin powder, smoked paprika, chili powder, black pepper, and salt. Set this spice blend aside for later use.
  • Sauté the Onions and Garlic:
    In a large skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook until they become soft and golden brown, about 5-7 minutes. Add the minced garlic and cook for an additional minute until fragrant.
  • Cook the Chicken Livers:
    Push the onions to the side of the skillet and add the chicken livers in a single layer. Sear the livers on medium-high heat for 2-3 minutes on each side, until they are browned and cooked through. Be careful not to overcook the livers, as they should remain slightly pink inside to keep them tender.
  • Season the Livers:
    Once the chicken livers are browned, sprinkle the spice blend over them and stir to coat evenly. Cook for another 2-3 minutes, ensuring the spices are well combined with the livers and onions.
  • Add Lemon Juice:
    Remove the skillet from heat and immediately squeeze fresh lemon juice over the chicken livers. This will add brightness and balance the rich flavors. Garnish with freshly chopped parsley.
  • Serve:
    Serve the chicken livers hot, either with warm bread, a side of rice, or a fresh green salad. Enjoy the flavorful combination of savory liver, spices, and the fresh tang of lemon.

Notes
